From the recipe to the sea­so­ning to the pre­pa­ra­ti­on, they pay meti­cu­lous atten­ti­on to every detail to pro­du­ce our deli­cious sau­sa­ge and meat pro­duc­ts, cold cuts, dips, ham, sau­sa­ges and snacks.

The art of our master but­chers is a valu­able tra­di­ti­on. All reci­pes ori­gi­na­te from over a hund­red years of tra­di­ti­on. Ham “Mett­würst­chen” / Pepper bites

One of our most tra­di­tio­nal pro­duc­ts is the ham “Mett­würst­chen”, which is smoked over tender, sustainab­ly cul­ti­va­ted beech wood shavings. Fresh pork meat com­bi­ned with aro­ma­tic spices to a hearty palate expe­ri­ence, which gets its final touch by the deli­ca­te smoke note.

Blood sau­sa­ge / Flönz

The tra­di­tio­nal blood sau­sa­ge with bacon is made accord­ing to an old family recipe. Its fine sau­sa­ge meat with cubic bacon inlay is cooked in a kettle in fine meat broth and smoked over natu­ral beech wood from sustainab­le cul­ti­va­ti­on. The hearty spicy taste with a fine Thu­rin­gi­an mar­jo­ram note com­bi­ned with the fluffy light con­sis­ten­cy beco­mes an abso­lu­te taste expe­ri­ence.

Our fine liver sau­sa­ge is made from selec­ted QS pork meat. The deli­cacy is finely balan­ced with hearty, tra­di­tio­nal spices and smoked over natu­ral beech wood from sustainab­le cul­ti­va­ti­on. It is free of fla­vour enhan­cers and avail­ab­le wit­hout smo­king.

The GS Schmitz coarse liver sau­sa­ge is lovin­g­ly pro­du­ced accord­ing to an old family recipe from selec­ted QS meat and hearty spices. The sau­sa­ge meat with up to pea-sized, chunky fil­ling con­sists of lean pork meat.

Spread­a­ble „Mett­wurst“ fine

Due to its spe­cial sea­so­ning and skil­ful refi­ne­ment, the GS Schmitz Spread­a­ble „Mett­wurst“ gets its very own touch. The cold smo­king pro­cess fol­lows the ela­bo­ra­te, slow matu­ring pro­cess and the drying phase. The com­bi­na­ti­on of the finest blossom honey and the unusual­ly long ripe­ning time in our cli­ma­te-con­trol­led cham­bers gives the Spread „Mett­wurst“ a noble taste.

But­cher’s ham

Our but­cher’s ham con­sists of tender, selec­ted ham parts. Here, the spice is gently mas­sa­ged in, placed in moulds by a master hand and then cooked at mode­ra­te tem­pe­ra­tures. GS Schmitz but­cher’s ham, like all our hams, are made from whole pieces of ham.

Farmer ham

The top­si­de of our Farmer ham is mildly salted. The tender pieces of meat are still placed into moulds by hand, refi­ned with real blossom honey and dark smoked. This makes the mas­ter­pie­ce par­ti­cu­lar­ly low in fat.
